How the hell did the olive oil hold up to that high temp and not fill his house with smoke?
I'm not sure. I wasn't there during the cooking process but when I did get there and tried ONE of the Scampi/shrimp <---SEE BECCA? I was like "uuuuummmmm what did you cook these in?" And she pulls out the exact bottle of EV olive oil I told her to buy and shows it to me almost empty.

I said THATS FOR THE SALAD!!!!
