Which jawbreaker colorway is the most striking one between these three?

Of the ones listed here the Ruby Fade one.
The Retina burn one is better to get OCP to make it cool looking. The stock version has boring silver icons (solved by getting it OCP) .

Much better than any of the 3 is the Purple Pop Fade.

Ruby fade looks nice

Cast another vote for Ruby Fade. If I could rock those, that'd be what I'd get.
Just something about the way they did the more matte coloring and incorporated the black to red. The icon is unique as well.
