Man if you like Menudo (which us Puerto Ricans cook similarly in a dish called Mondongo) you will LOVE a dish the Spanish make called Callos (yeah, like the word for "calluses"). It is like Mondongo or Menudo but much, much heartier/thicker, with some chorizo, chickpeas and ham added. Had it when I was in Spain a couple of months back and it was amazing.
