That particular one wasn't 100% from scratch - it was one of those pre-mixed packages where you boil some water and oil, mix in a seasoning packet, throw in some uncooked rice, cover and simmer for 20 mins.
But doing it from scratch doesn't take much. Here's the simplest recipe:
- Cook a batch of rice (1 cup water with 1/2 cup rice, bring to boil, cover and simmer 20 mins)
- Mix in 1/4 cup cubed processed cheese (like Velveeta) and an herb of your choice (like parsley; diced green chiles work well too but I'd saute them first)
- Cover and let stand for a couple of minutes to melt the cheese then stir until blended; salt and pepper to taste.
That's for about two servings; scale appropriately.
A fancier recipe, yields six servings:
- Mix 2 cups cooked rice, 1/2 cup sour cream, 1 cup chopped green onion, a drained and chopped 4 oz can of green chiles, 1 cup shredded cheddar, and salt and pepper to taste.
- Butter a casserole dish and sprinkle with parmesan. Add rice mixture.
- Sprinkle more parmesan on top and dot with some thin butter slices.
- Bake at 450 degrees for 20 mins.
