My Adventures with Pork Belly, part 1...

Last night, put it in a marinade of soy sauce, rice wine, brown sugar, and garlic. Enough so the meat's submerged but the skin is still exposed...

And today, after marinating / air drying overnight in the fridge; note the before / after pics, how much color the skin got from the air drying...
