Selfmade spring rolls

Restaurant Tim Raue, a 2* heavily Asian-influenced restaurant here in Berlin.

A selection of amuses bouche to start proceedings. Several pickled elements, which I always think gets a meal off to a good start.

Brussels, banana and kaffir lime! Shouldn’t have worked, but it really did. I love how many sour tastes were used throughout this menu.

Pumpkin, tomato and star anise. I started off not being a fan of star anise. And also ended that way! But once I’d cleared the green bits of anise plant, the rest was great.

Carrots! Sweet and buttery, offset by tart passion fruit.

Jerusalem artichokes. Was deep and earthy, although I didn’t quite get the relationship with the other dish of mango, pickled onion and cucumber.

Probably the star dish, though the dessert was great too. Spiced tofu with wild Madagascan pepper and a host of variations on onion. All the ingredients are on the detailed menu and yet there are still surprises in each dish.

A palette cleanser of mango cream, black tea ice cream, meringue and mustard. Yes, mustard! Not entirely sold on that but it kinda worked.

Dessert. The fish is Valrhona Dulcey chocolate (which, for all intents and purposes is posh Caramac!), filled with cheesecake and caramel. The various gels and creams are yuzu. The leaves are from a lime. Very clean and fresh.

Petits four, majoring on mandarin and kalamansi. Very nice. Was given some more in a velvet bag to take away too.

Raue gets some flak for being a Kreuzfeld bloke using Asian flavours but for me they worked and stunningly well too. Not cheap, but the experience was worth it to me.
 
I've run into those under their alternative name sunchokes. They are quite tasty, like a potato only nuttier.
Yes, I remember having to look up what a sunchoke was and us discussing it subsequently. I’m used to them as a soup, was interesting to eat them intact.
