So, how I got myself in this situation is told here...

...but The Kid and I made some cupcakes yesterday.

I don't bake at all. I use the oven plenty, but I don't bake. What's the difference between baking and roasting? You use the oven the same way; the difference is what you're cooking - with roasting, you're just cooking an item that already has a structure, like meat or vegetables. With baking, the cooking time both cooks it and gives it structure, like bread or cookies or... cupcakes.

Technically the casseroles I do would qualify as baking, but I'm not much into desserts so I've never bakes cakes or cupcakes. Haven't done bread either, unless you count a pan or two of cornbread. So this was a first for both of us...

The ingredients...

First take a stick of softened butter and mix it up with a cup of sugar. Really, if I used confectioner's (powdered) sugar and added a little milk and flavor, this would be icing...

Beat in two eggs, one at a time...

2 cups flour, 2 tsp baking powder, 1 tsp salt, 1 cup milk, 1 tsp vanilla extract. Add flour and milk in alternating small doses...

Into the cake cups...

And into the 375 degree oven...

Let them cool before adding frosting and sprinkles...

Overall they turned out well. Coulda been a disaster, but it all worked out. Yay!
