What's On Your Plate???

OK, between my business trip to NJ and my personal trip to Vegas, I've spent four of the last seven days partially or completely filled with air travel, totaling nine flights. Of the other three days, each was in a different time zone... it's been a bit much. Have a lot to process.

So, though there were a number of thread-worthy meals during the Vegas trip, give me some patience...

I'll start with some drinks on the legs out to Vegas. We flew Frontier, a discount airline I've never flown before. I have some observations, mostly pro, but I enjoyed the alcohol selection. I've been on an IPA kick lately and this was a Colorado beer I haven't had before, Dale's Pale Ale; it was pretty good.

But the Scotch... most airlines have blended Dewars in plastic bottles. Always one last drip left... Sometimes you run into Glenlivet 12 year single-malt in a glass bottle, with a twist-off cap. Not knocking Glenlivet; I cut my Scotch teeth on that stuff. But it is light and subtly flavored... Frontier had a full-flavored Macallan 12 year single-malt in a thick glass bottle with a proper cork stopper...

Friday night in Vegas we had dinner at Gordon Ramsay Steak. (Afterwards we went to see X Burlesque at the Flamingo but that's a whole other story...)

It was probably the best of the various meals we had.

The hostess seating us explained this neon display was supposed to represent Ramsay's hand movements while preparing his signature Beef Wellington. OK, whatever...

But speaking of hostesses, they had a whole bunch of them, "pleasingly" dressed. I was trying to be discrete so these pics suck but you get the idea...

On to the food...

Here's the bread for while you wait for the food. Normally you wouldn't expect something like that to be notable but each piece was unique and delicious. Those two pinwheels things - each was different, light and flaky, one had bacon in it. The black stuff on the butter pat was smoked sea salt. Nice touch...

Next up was a Hamachi crudo, with uni and smoked salmon roe:

This was a smoked beef tartare. It was served with some house-made potato chips (not pictured) to scoop it on:

During the meal I was washing it all down with a couple of these, Innis and Gunn smoked IPA. Very tasty, not as hoppy as normal IPAs:

Now the entrees - The Wife had a American Kobe rib cap steak, med rare, with a side of seared foie gras:

It was all quite delicious, and we walked away totally stuffed.

Unfortunately the X Burlesque show didn't allow pics, you'll just have to use your imagination...
 
I can't say I've ever eaten marrow like that. I'm not sure I could. What's it like?

Interesting - I've had it before at a local place called the Salty Sow but this one had a lot more marrow in it - hard to describe the texture, very soft. Kinda fatty / greasy (the waiter kept describing cuts with a lot of fat as "decadent"...) Very flavorful though. One of the ingredients when making beef stock is beef bones, where you boil out the flavor of the marrow into the stock. It tasted like that, only very concentrated.
