The meat itself is usually covered. We used this technique in china because we didnt have have enough energy resources to slow cook brisket all day long. So we give it some heat and liquids and let it simmer in its own juices all night long instead.

The Wife has a vacuum cooker for that - You boil the pot for a period of time then stick it in a vacuum-insulated shell so it maintains the heat long enough to cook overnight.
 
Wish we had that in china. I just remembered the boiling part rite after sending reply thru. Then saute in wok for a with sauce and ginger and orange zest for a bit then leave in a bowl covered with seran wrap for a nite. My godfather left the whole in the wok for the nite.

I forgot to mention, i dont cook. My dads only rule with me was phil does not cook!
