Just worked out that way. Never ate any as a child... And I never became curious as an adult. I just assumed that you only carve pumpkins, not eat them.

Hey Kronin, everything is spot on for your chilli recipe compared to mine. But, have ever thought of adding unsweetended chocolate or cocao powder? Give's it depth almost like a mole.

Also, for a Detroit greek style chilli (also known as Coney Island chilli) leave out the fresh peppers and add nutmeg and cinnamin. Sounds weird but it is amazing!!!!
 
I have a soft spot for the canned stuff. I had never had a scratch made pumpkin pie until a girlfriend in college made one. I wasn't a fan, but she wasn't much of a cook, either.

When using fresh pumpkin you have to taste it raw to figure out how much sugar to add. Then re-taste before cooking to make sure it is sweet enough. My son will eat the whole pumpkin raw if I let him (odd but he is only 4).
