Then I cooked this last night, crispy flounder topped with sun-dried tomato and kalamata tapenade with spinach and shallot orzo. The tapenade went really well with the fish, it was all excellent...

Steak looks great. I spearfish and used to shoot loots of flounder (mostly plaice, Pleuronectes platessa) as a youth (still do, but more cod, wolf fish etc. now) Great eating if they aren't too small.
