I don't know if any of y'all do this, too, but one of our Halloween holiday traditions is to roast the pumpkin seeds from our jack-o-lantern.

There's loads of different recipes for roasted pumpkin seeds. Most involve coating them in either butter or oil and a seasoning mix. I've tried a bunch of those but frankly, IMO you can't beat a simple brine and dry roast.

We had a disappointingly small yield this year, usually at least twice as much:

Wash off all the pumpkin bits and brine them overnight in a simple salt water solution. Some recipes have you boil them in salt water for a while but that's just a shortcut that creates more dirty dishes:

Then dry them between some paper towels for another night (no pics because I'm not that far yet).

Finally, no oil, no seasoning, just roast them straight at 400 degrees for 10 - 20 mins or until golden brown. Make sure you don't burn them.

The Wife likes to shell them but, like many others, I just eat them whole. More nutrition and fiber that way (and a lot less effort)... Delicious!

I do the same thing whenever I cook an appropriately-seeded squash, like acorn or butternut...
 
Just worked out that way. Never ate any as a child... And I never became curious as an adult. I just assumed that you only carve pumpkins, not eat them.

haha well if you ever want to try out pumpkin seeds you can usually get a bag ready-to-eat at the grocery store... though the homemade ones are better...
 
Anybody ever turn your jack-o-lantern into a pie or something after Halloween's over?

Mine's usually too moldy and just goes into the trash...
 
Yes, but we dont use the ones that got cut up, we use the whole ones. Let me tell you home made pumpkin pie is SOOOOO much better than the canned stuff
