The signature dessert, a baba with Armagnac rather than rum, produced by the Darroze family for generations. There was a choice of 3 vintages - I went 50:50 with 1985 and 1995. The digestif menu had vintages back to 1918 - a snip at £395 a glass.

Rhubarb and lemongrass. This was yummy too, the tartness of the rhubarb and lemongrass leaves balanced by cream. Though the lemon dessert looked great too and had the added bonus of finger limes.

The baba was accompanied by a chestnut chantilly, green apple sorbet and marron glacé.
